Mr. J Timberlake, Jay-Z, and Banana Nut Muffins...Good Day, Gooood Day

At 10am this morning, you better believe I was buying my tickets for the Legends of Summer Concert!

I've only been to a handful of concerts in my life...Nsync, Snoop Dogg, Slightly Stoopid, and Dev. I have yet to be disappointed by a live show and a truly doubt that Jay-Z or Justin Timberlake would let me down. Especially Justin Timberlake! Be still, my former 13 year old heart!

So August 4th in Hershey, PA...I'm counting down the days.

After dinner, Peter and I were a bit impulsive with our overly ripe bananas. I originally thought of freezing them and making Nutella ice cream, but we decided to put a bit more effort into it. It was my rest day so I had energy to do so! We made banana nut muffins. They were so good too! It was a Paula Deen recipe I Google'd.

Surprisingly, NO BUTTER! Is Paula feeling alright?



And here I thought it wouldn't make enough and yet, these things are gigantic!!!

Here's the super amazing recipe! Our modifications are shown.

Banana Nut Muffins
  1. 2 cups all-purpose flour
  2. 1 cup sugar
  3. 1 teaspoon baking soda
  4. 1/2 teaspoon baking powder
  5. 1/2 teaspoon ground cinnamon
  6. 1/4 teaspoon salt
  7. 1 cup mashed ripe banana (It only took 2 bananas for us to make a cup)
  8. 1/2 cup vegetable oil
  9. 2 large eggs
  10. 2 tablespoons milk
  11. 1 cup chopped pecans walnuts
  12. Garnish: confectioners' sugar, fresh raspberries (Didn't need anything!)
Instructions
  1. Preheat oven to 400°. Lightly grease 15 cups of a muffin pan. (we poured ours into 12 cups)
  2. In a large bowl, combine flour, sugar, baking soda, baking powder, cinnamon, and salt.
  3. In a medium bowl, combine banana, oil, eggs, and milk; add to flour mixture, stirring until just combined. Stir in pecans. Spoon batter evenly into prepared muffin cups. Bake for 12 to 15 minutes, or until golden brown. Let cool on wire racks. Garnish with confectioners sugar and fresh raspberries, if desired.
